
Quinoa is a grain crop that is grown for its edible seeds. In other words, it is basically a seed, which is prepared and eaten similarly to a grain. Quinoa was an important crop for the Inca Empire. They referred to it as the “mother of all grains” and believed it to be sacred. Quinoa is a flowering plant in the amaranth family. It is an herbaceous annual plant grown as a crop primarily for its edible seeds; the seeds are rich in protein, dietary fiber, B vitamins, and dietary minerals in amounts greater than in many grains.
Often referred to as the supergrain, quinoa (KEEN-wah) is high in fiber and high-quality protein. In fact, it contains more protein than any other grain while also packing in iron and potassium. One half cup of quinoa has 8 grams of protein and 6 grams of fiber.
